- 1 pound sea scallops
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the scallops dry with a paper towel and season with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat until hot.
- Add the scallops to the skillet in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes without moving them until they develop a golden crust.
- Flip the scallops and add the butter and minced garlic. Cook for another 2-3 minutes, basting the scallops with the melted butter.
- Add lemon juice and zest to the skillet, stirring to combine. Cook for an additional minute.
- Remove from heat, garnish with fresh parsley, and serve immediately.
