- 2 cod fillets (6 oz each)
- 1 bunch asparagus, trimmed
- 3 tbsp butter, melted
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss asparagus with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast asparagus for 10 minutes.
- Mix melted butter, garlic, lemon juice, zest, and parsley in a bowl.
- Place cod fillets on the baking sheet with asparagus.
- Pour butter mixture over the cod.
- Bake for 12-15 minutes until cod flakes easily.
- Serve immediately.
