Ingredients

  • 1 bunch asparagus, trimmed
  • 3 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss asparagus with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast asparagus for 10 minutes.
  4. Mix melted butter, garlic, lemon juice, zest, and parsley in a bowl.
  5. Place cod fillets on the baking sheet with asparagus.
  6. Pour butter mixture over the cod.
  7. Bake for 12-15 minutes until cod flakes easily.
  8. Serve immediately.
