- 1/4 cup unsalted butter
- 4 cloves garlic, minced
- Juice and zest of 2 lemons
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups mixed vegetables (carrots, bell peppers, zucchini, etc.)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- In a skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in lemon juice, lemon zest, oregano, salt, and pepper. Remove from heat.
- Place the chicken breasts in the skillet and coat them with the lemon garlic butter sauce.
- Transfer the chicken to the baking sheet with the vegetables.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Garnish with fresh parsley if desired and serve hot.
