  • 4 cloves garlic, minced
  • Juice and zest of 2 lemons
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini, etc.)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. In a skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Stir in lemon juice, lemon zest, oregano, salt, and pepper. Remove from heat.
