Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together melted butter, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Place the chicken breasts in a 9×13 inch baking dish and pour half of the lemon garlic butter mixture over the chicken, ensuring they are well coated.
  4. In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper until evenly coated.
  5. Arrange the vegetables around the chicken in the baking dish.
  6. Drizzle the remaining lemon garlic butter mixture over the vegetables.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  8. Remove from the oven and let rest for 5 minutes before serving.
  9. Garnish with fresh parsley and serve hot.
