- 4 boneless, skinless chicken breasts
- 1/4 cup unsalted butter, melted
- 4 cloves garlic, minced
- Juice of 2 lemons
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups mixed vegetables (carrots, bell peppers, zucchini, broccoli)
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together melted butter, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Place the chicken breasts in a 9×13 inch baking dish and pour half of the lemon garlic butter mixture over the chicken, ensuring they are well coated.
- In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper until evenly coated.
- Arrange the vegetables around the chicken in the baking dish.
- Drizzle the remaining lemon garlic butter mixture over the vegetables.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let rest for 5 minutes before serving.
- Garnish with fresh parsley and serve hot.
Notes
- Feel free to use your favorite vegetables for roasting.
- Make sure the chicken reaches an internal temperature of 165°F (75°C) for safety.
