Ingredients

- 200g unsalted butter, softened
- 200g caster sugar
- 4 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 2 lemons, zested and juiced
- 100g icing sugar
Instructions
- Preheat oven to 180°C (160°C fan). Grease a loaf tin.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Fold in flour, baking powder, and lemon zest.
- Pour batter into the tin and bake for 40-45 mins.
- Mix lemon juice and icing sugar for the glaze.
- Drizzle glaze over the cooled cake.
