Ingredients

- 2 salmon fillets (about 6 oz each)
- 1 lb potatoes, cubed
- 2 tbsp olive oil
- 1 lemon, sliced
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Toss the potato cubes with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet.
- Bake the potatoes for 20 minutes, flipping halfway through.
- Place the salmon fillets on the baking sheet. Drizzle with the remaining olive oil, and season with salt, pepper, and dill.
- Add lemon slices on top of the salmon.
- Bake for another 12-15 minutes, or until the salmon is cooked through.
- Serve immediately.

- Use fresh dill for the best flavor.
- Ensure the potatoes are crispy before adding the salmon.
