- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1 cup fresh blueberries
- 1/4 cup sugar (for blueberry swirl)
Instructions
- Preheat your oven to 325°F (165°C).
- Mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in lemon juice and lemon zest. Pour the mixture over the crust.
- In a small saucepan, cook blueberries and sugar over medium heat until berries burst and mixture thickens. Let cool slightly.
- Drop spoonfuls of the blueberry mixture onto the cheesecake batter. Use a knife to swirl the blueberry mixture into the batter.
- Bake for 45 minutes or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for best results.
- Allow the cheesecake to cool completely before refrigerating.
- You can use frozen blueberries if fresh are not available.
