Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, cream together the softened butter and granulated sugar until smooth. Mix in 2 cups of flour and 1/4 teaspoon salt until well combined. Press the mixture into the bottom of the prepared baking dish.
  3. Bake the crust in the preheated oven for 15 to 20 minutes, or until lightly golden.
  4. In a separate bowl, whisk together 1 1/2 cups sugar and 1/4 cup flour. Add in the eggs, lemon juice, and lemon zest, and mix until smooth.
  5. Pour the lemon filling over the hot crust and return to the oven. Bake for an additional 20 to 25 minutes, or until the filling is set.
  6. Allow the lemon bars to cool completely in the pan before dusting with powdered sugar and cutting into squares.
