Ingredients

  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 4 Vietnamese baguettes
  • 1 cup pickled carrots and daikon
  • 1/2 cucumber, sliced
  • 1/4 cup cilantro
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha

Instructions

  1. Preheat oven to 375°F.
  2. Mix ground beef, breadcrumbs, egg, garlic, soy sauce, gochujang, brown sugar, sesame oil, and black pepper in a bowl.
  3. Shape mixture into meatballs (about 1.5 inches diameter).
  4. Bake meatballs for 20 minutes until browned.
  5. Cut baguettes in half lengthwise.
  6. Spread mayonnaise and sriracha on the bread.
  7. Layer meatballs, pickled carrots and daikon, cucumber slices, and cilantro.
  8. Serve immediately.
