A low-carb version of the classic shepherd’s pie, perfect for a keto diet.


Ingredients

  • 1 lb ground beef
  • 1 cup cauliflower, riced
  • 1 cup green beans, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  3. Add ground beef, cook until browned.
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Add beef broth and green beans. Simmer for 5 minutes.
  6. In a separate pot, steam the riced cauliflower until tender. Mash with a fork.
  7. Spread the beef mixture in a baking dish. Top with mashed cauliflower.
  8. Sprinkle cheddar cheese on top.
  9. Bake for 20 minutes or until cheese is melted and bubbly.

Notes

  • You can substitute ground turkey for beef.
  • Add other low-carb vegetables if desired.
