A low-carb version of the classic shepherd’s pie, perfect for a keto diet.
Ingredients

- 1 lb ground beef
- 1 cup cauliflower, riced
- 1 cup green beans, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
- Add ground beef, cook until browned.
- Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Add beef broth and green beans. Simmer for 5 minutes.
- In a separate pot, steam the riced cauliflower until tender. Mash with a fork.
- Spread the beef mixture in a baking dish. Top with mashed cauliflower.
- Sprinkle cheddar cheese on top.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- You can substitute ground turkey for beef.
- Add other low-carb vegetables if desired.
- Store leftovers in an airtight container in the fridge.
