A comforting and nutritious kale potato soup perfect for any time of the year.
Ingredients
Scale
- 2 cups of chopped kale
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of milk or plant-based milk
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Sauté until translucent.
- Add diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in chopped kale and cook for an additional 5 minutes.
- Blend the soup for a smoother consistency, if desired.
- Stir in milk and season with salt and pepper.
- Serve hot.
Notes
- Adjust the thickness by adding more or less broth.
- Can add protein like beans or chicken for extra nutrition.
