Ingredients

- 2 lbs lamb or beef, cut into chunks
- 4 cups beef or vegetable broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the meat and brown on all sides.
- Remove the meat and set aside.
- Add onions and garlic; sauté until soft.
- Return the meat to the pot.
- Add broth, Worcestershire sauce, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add carrots and potatoes; cook for another 30 minutes until tender.
- Meanwhile, boil potatoes in a separate pot until soft, then mash with butter and milk.
- Serve the stew hot with a side of mashed potatoes.
