Ingredients

  • 2 lbs lamb or beef, cut into chunks
  • 4 cups beef or vegetable broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the meat and brown on all sides.
  3. Remove the meat and set aside.
  4. Add onions and garlic; sauté until soft.
  5. Return the meat to the pot.
  6. Add broth, Worcestershire sauce, thyme, and rosemary.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Add carrots and potatoes; cook for another 30 minutes until tender.
  9. Meanwhile, boil potatoes in a separate pot until soft, then mash with butter and milk.
  10. Serve the stew hot with a side of mashed potatoes.
