Ingredients
- Potato chips – 200g
- Irish cheddar cheese – 150g
- Colcannon (mashed potatoes with kale) – 250g
- Smoked salmon – 100g
- Brown soda bread – 1 loaf
- Irish butter – 50g
- Pickled onions – 100g
- Guinness – 1 can
Instructions
- Preheat the oven to 180°C.
- Slice the brown soda bread into small pieces.
- Spread Irish butter on each slice.
- Layer Irish cheddar cheese on top of the buttered bread.
- Bake in the oven for 10 minutes until cheese melts.
- Prepare colcannon by mixing mashed potatoes with cooked kale.
- Arrange potato chips on a serving platter.
- Top with colcannon, smoked salmon, and pickled onions.
- Serve with a cold can of Guinness.
