  • Brown soda bread – 1 loaf
  • Irish butter – 50g
  • Pickled onions – 100g
  • Guinness – 1 can

Instructions

  1. Preheat the oven to 180°C.
  2. Slice the brown soda bread into small pieces.
  3. Spread Irish butter on each slice.
  4. Layer Irish cheddar cheese on top of the buttered bread.
  5. Bake in the oven for 10 minutes until cheese melts.
  6. Prepare colcannon by mixing mashed potatoes with cooked kale.
  7. Arrange potato chips on a serving platter.
  8. Top with colcannon, smoked salmon, and pickled onions.
  9. Serve with a cold can of Guinness.
