Description
Irish colcannon potatoes are a traditional dish made with mashed potatoes and cabbage or kale.
Ingredients

- 2 pounds potatoes
- 1 cup chopped cabbage or kale
- 1/2 cup milk
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Peel and chop the potatoes.
- Boil the potatoes in salted water until tender.
- In a separate pot, cook the cabbage or kale until soft.
- Drain the potatoes and mash them.
- Add milk, butter, salt, and pepper to the mashed potatoes.
- Fold in the cooked cabbage or kale.
- Serve warm.
