Ingredients

- 1 kg chicken, cut into pieces
- 2 tablespoons olive oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 cups chicken broth
- 1 cup potatoes, diced
- 1 tablespoon fresh thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Stir in chicken pieces, browning on all sides.
- Add carrots, potatoes, and thyme.
- Pour in chicken broth, season with salt and pepper.
- Cover and simmer for 30 minutes until chicken is cooked through.
- Serve hot with bread or rice.
Notes
- Use bone-in chicken for more flavor.
- Feel free to add other vegetables.
- Leftovers can be stored in the fridge for up to 3 days.
