Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Stir in chicken pieces, browning on all sides.
  4. Add carrots, potatoes, and thyme.
  5. Pour in chicken broth, season with salt and pepper.
  6. Cover and simmer for 30 minutes until chicken is cooked through.
