- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup diced vegetables (carrots, bell peppers, etc.)
Instructions
- 1. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- 2. Set the Instant Pot to sauté mode and heat olive oil.
- 3. Add the seasoned chicken breasts and sear for 2-3 minutes on each side until golden brown.
- 4. Remove the chicken and set aside.
- 5. Add chicken broth to the pot, scraping up any browned bits from the bottom.
- 6. Return the chicken to the pot and add the diced vegetables.
- 7. Close the lid and set the Instant Pot to cook on high pressure for 10 minutes.
- 8. Once the cooking time is complete, allow for a natural release for 5 minutes, then quick release any remaining pressure.
- 9. Shred the chicken using two forks and stir it into the juices before serving.
Notes
- You can customize the vegetables based on your preference.
- For added flavor, consider marinating the chicken beforehand.
- Serve over rice or in a wrap for a complete meal.
