- 2 pounds beef chuck, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up.
- Add the beef in batches and brown on all sides. Remove the beef and set aside.
- Add onions and garlic to the pot, sautéing until softened, about 2-3 minutes.
- Return the beef to the pot along with carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Close the lid of the Instant Pot and set it to ‘Manual’ or ‘Pressure Cook’ mode for 35 minutes.
- Once the cooking time is complete, allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
- If you prefer a thicker stew, mix cornstarch with water in a small bowl and stir it into the stew. Set the Instant Pot to ‘Sauté’ mode and cook for a few more minutes until thickened.
- Serve hot and enjoy your delicious beef stew!
Notes
- Feel free to add other vegetables like peas or mushrooms.
- For an even richer flavor, brown the beef in batches and deglaze the pot with a splash of red wine before adding the broth.
