- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 2 cups mixed vegetables (carrots, peas, bell peppers, cauliflower)
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add cumin seeds and mustard seeds; let them splutter.
- Add chopped onion and sauté until translucent.
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Add turmeric, garam masala, and coriander powder; mix well.
- Add mixed vegetables and sauté for 5 minutes.
- Pour in diced tomatoes and coconut milk; stir to combine.
- Season with salt, cover, and simmer for 20 minutes until vegetables are tender.
- Garnish with fresh cilantro before serving.
