Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 2 cups mixed vegetables (carrots, peas, bell peppers, cauliflower)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add cumin seeds and mustard seeds; let them splutter.
  3. Add chopped onion and sauté until translucent.
  4. Stir in garlic and ginger; cook for 1 minute until fragrant.
  5. Add turmeric, garam masala, and coriander powder; mix well.
  6. Add mixed vegetables and sauté for 5 minutes.
  7. Pour in diced tomatoes and coconut milk; stir to combine.
  8. Season with salt, cover, and simmer for 20 minutes until vegetables are tender.
  9. Garnish with fresh cilantro before serving.
