- 500g pumpkin, cubed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 1 tomato, chopped
- 1 cup coconut milk
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Let them sizzle.
- Add chopped onion and sauté until golden.
- Add garlic, ginger, and tomato. Cook until soft.
- Stir in turmeric, coriander, red chili powder, and salt.
- Add pumpkin cubes and mix well.
- Pour coconut milk and simmer until pumpkin is tender.
- Sprinkle garam masala and garnish with cilantro.
- Serve hot with rice or bread.
