Ingredients

  • 1 onion, finely chopped

  • 1-inch ginger, grated
  • 1 tomato, chopped
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them sizzle.
  2. Add chopped onion and sauté until golden.
  3. Add garlic, ginger, and tomato. Cook until soft.
  4. Stir in turmeric, coriander, red chili powder, and salt.
  5. Add pumpkin cubes and mix well.
  6. Pour coconut milk and simmer until pumpkin is tender.
  7. Sprinkle garam masala and garnish with cilantro.
