Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives or parsley for garnish (optional)

Instructions

  1. Place eggs in a pot and cover with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, remove from heat, cover, and let sit for 12 minutes.
  3. After 12 minutes, transfer eggs to an ice bath to cool for 5 minutes.
  4. Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a bowl.
  5. Mash the yolks with a fork and add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth.
  6. Spoon or pipe the yolk mixture back into the egg whites.
  7. Sprinkle with paprika and garnish with chives or parsley if desired.
  8. Serve chilled.
