Ingredients

  • 1 lb salmon fillet, cut into cubes
  • 1 lb shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1/4 cup honey
  • 2 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1/2 cup diced pineapple
  • 1 avocado, diced
  • 1/4 cup diced red onion
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Mix honey, sriracha, soy sauce, and lime juice in a bowl.
  3. Toss salmon and shrimp in half the sauce.
  4. Place salmon and shrimp on a baking sheet and bake for 12 minutes.
  5. Combine pineapple, avocado, red onion, and cilantro in a bowl.
  6. Heat olive oil in a pan and cook rice for 3 minutes.
  7. Assemble bowls with rice, salmon, shrimp, and salsa.
  8. Drizzle remaining sauce over the top.
