A delicious and easy-to-make dish featuring tender chicken, al dente pasta, and fresh broccoli tossed in a sweet and tangy honey mustard sauce.

- 2 boneless, skinless chicken breasts
- 2 cups pasta (penne or fusilli recommended)
- 2 cups broccoli florets
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper and add them to the skillet. Cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- In a small bowl, whisk together honey and Dijon mustard. Pour the mixture into the skillet and bring to a simmer.
- Slice the chicken breasts and add them back to the skillet along with the cooked pasta and broccoli. Toss everything together until well coated in the sauce.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
- Feel free to add other vegetables like bell peppers or spinach for added nutrition.
- You can substitute chicken thighs for chicken breasts for a juicier option.
