Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cooked quinoa or rice
Instructions
- Preheat grill or grill pan to medium-high heat.
- Mix honey, mustard, olive oil, garlic powder, paprika, salt, and black pepper in a bowl.
- Coat chicken breasts with half the honey mustard mixture.
- Grill chicken for 6-7 minutes per side until fully cooked.
- Toss vegetables in remaining honey mustard mixture.
- Grill vegetables for 4-5 minutes until tender.
- Slice grilled chicken.
- Assemble bowls with quinoa or rice, grilled chicken, and vegetables.
Notes
- Marinate chicken for 30 minutes for deeper flavor.
- Use any preferred vegetables.
- Adjust honey mustard sauce to taste.
