Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cooked quinoa or rice

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Mix honey, mustard, olive oil, garlic powder, paprika, salt, and black pepper in a bowl.
  3. Coat chicken breasts with half the honey mustard mixture.
  4. Grill chicken for 6-7 minutes per side until fully cooked.
  5. Toss vegetables in remaining honey mustard mixture.
  6. Grill vegetables for 4-5 minutes until tender.
  7. Slice grilled chicken.
  8. Assemble bowls with quinoa or rice, grilled chicken, and vegetables.
