Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 cup snap peas
  • 1 tbsp cornstarch (optional, for thickening)
  • 1/4 cup water
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, mix chicken with soy sauce, honey, garlic, and ginger. Let marinate for 10 minutes.
  2. Heat oil in a large pan or wok over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same pan, stir-fry bell pepper, broccoli, carrot, and snap peas for 3-4 minutes until crisp-tender.
  4. Return chicken to the pan. Mix cornstarch with water and add to the pan, stirring until the sauce thickens.
  5. Drizzle with sesame oil and sprinkle red pepper flakes if desired. Serve hot over rice or noodles.
