Ingredients

- 1 lb boneless, skinless chicken breast, sliced
- 2 tbsp soy sauce
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1/2 cup snap peas
- 1 tbsp cornstarch (optional, for thickening)
- 1/4 cup water
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes (optional)
Instructions
- In a bowl, mix chicken with soy sauce, honey, garlic, and ginger. Let marinate for 10 minutes.
- Heat oil in a large pan or wok over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove and set aside.
- In the same pan, stir-fry bell pepper, broccoli, carrot, and snap peas for 3-4 minutes until crisp-tender.
- Return chicken to the pan. Mix cornstarch with water and add to the pan, stirring until the sauce thickens.
- Drizzle with sesame oil and sprinkle red pepper flakes if desired. Serve hot over rice or noodles.

- For extra crunch, add cashews or peanuts.
