Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 1/4 cup sour cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix Dijon mustard, honey, olive oil, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Coat chicken breasts in the honey Dijon mixture.
  4. Place chicken on a baking sheet and bake for 25 minutes or until fully cooked.
  5. Boil potatoes in salted water until tender, about 15 minutes.
  6. Drain potatoes and mash with milk, butter, sour cream, salt, and pepper.
  7. Serve chicken with mashed potatoes.
