- 4 boneless, skinless chicken breasts
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
- 1/4 cup sour cream
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Mix Dijon mustard, honey, olive oil, garlic powder, onion powder, salt, and pepper in a bowl.
- Coat chicken breasts in the honey Dijon mixture.
- Place chicken on a baking sheet and bake for 25 minutes or until fully cooked.
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and mash with milk, butter, sour cream, salt, and pepper.
- Serve chicken with mashed potatoes.
Notes
- Use fresh Dijon mustard for best flavor.
- Adjust honey and mustard to taste.
- For extra creaminess, add more milk or butter to mashed potatoes.
