- 4 medium potatoes (Russet or Yukon Gold are recommended)
- 4 cups vegetable oil (for frying)

Instructions
- Wash and peel the potatoes. Use a mandoline slicer or a sharp knife to cut the potatoes into thin slices, about 1/8 inch thick.
- Place the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch, which helps them crisp up.
- Drain the potato slices and pat them dry thoroughly with a clean kitchen towel or paper towels.
- In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Working in batches, carefully add the potato slices to the hot oil, making sure not to overcrowd the pot.
- Fry the potato slices for about 3-5 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
- While the chips are still warm, sprinkle them with salt and any optional seasonings you like.
- Allow the chips to cool completely before serving. Store any leftovers in an airtight container.
