Ingredients

  • 4 medium potatoes (Russet or Yukon Gold are recommended)
  • 4 cups vegetable oil (for frying)

Instructions

  1. Wash and peel the potatoes. Use a mandoline slicer or a sharp knife to cut the potatoes into thin slices, about 1/8 inch thick.
  2. Place the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch, which helps them crisp up.
  3. Drain the potato slices and pat them dry thoroughly with a clean kitchen towel or paper towels.
  4. In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
  5. Working in batches, carefully add the potato slices to the hot oil, making sure not to overcrowd the pot.
  6. Fry the potato slices for about 3-5 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
  7. While the chips are still warm, sprinkle them with salt and any optional seasonings you like.
  8. Allow the chips to cool completely before serving. Store any leftovers in an airtight container.
