- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon paprika (optional)

- Wash and peel the potatoes. Slice them thinly (about 1/8 inch thick) using a mandoline or sharp knife.
- Soak the potato slices in water for at least 30 minutes to remove excess starch. This helps them become crispier.
- Drain the potatoes and pat them dry with a towel to remove moisture.
- In a large bowl, toss the potato slices with olive oil, salt, and any additional seasonings you choose.
- Preheat the air fryer to 360°F (182°C).
- Place the potato slices in a single layer in the air fryer basket. You may need to do this in batches.
- Air fry for 15-20 minutes, shaking the basket halfway through cooking to ensure even crisping.
- Once the chips are golden brown and crispy, remove them from the air fryer and let them cool on a wire rack.
