Description

A quick and easy hibachi-style chicken fried rice you can make at home. It’s packed with flavor and ready in minutes.


Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 1 boneless, skinless chicken breast (diced into small pieces)
  • 2 eggs (beaten)
  • 1 small onion (finely chopped)
  • 1 carrot (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 1 green onion (sliced for garnish)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until no longer pink, about 5 minutes. Set aside.
  3. In the same pan, scramble the eggs and set aside.
  4. Add a little more oil if needed, then sauté onions, carrots, and garlic for 3 minutes.
  5. Stir in cooked rice, breaking up any clumps.
  6. Add soy sauce, sesame oil, chicken, and scrambled eggs. Mix well.
  7. Cook for another 2-3 minutes, stirring occasionally.
  8. Garnish with green onions and serve hot.

Notes

  • Use day-old rice for best texture.
  • Adjust soy sauce to taste.
  • Add other vegetables like peas or bell peppers if desired.
