Description

A simple and flavorful herbed rice pilaf made with aromatic herbs and fluffy rice.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable or chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add rice and toast for 2 minutes, stirring frequently.
  5. Pour in broth, bring to a boil, then reduce heat to low.
  6. Cover and simmer for 15 minutes or until liquid is absorbed.
  7. Remove from heat and let sit for 5 minutes.
  8. Fluff rice with a fork and mix in fresh herbs.
  9. Season with salt and pepper.

Notes

  • Use basmati rice for extra fragrance.
  • Substitute dried herbs if fresh ones are unavailable (use 1/3 the amount).
  • Add a squeeze of lemon juice for brightness.
