Description
A simple and flavorful herbed rice pilaf made with aromatic herbs and fluffy rice.
Ingredients
Scale
- 1 cup long-grain white rice
- 2 cups vegetable or chicken broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for 30 seconds.
- Add rice and toast for 2 minutes, stirring frequently.
- Pour in broth, bring to a boil, then reduce heat to low.
- Cover and simmer for 15 minutes or until liquid is absorbed.
- Remove from heat and let sit for 5 minutes.
- Fluff rice with a fork and mix in fresh herbs.
- Season with salt and pepper.
Notes
- Use basmati rice for extra fragrance.
- Substitute dried herbs if fresh ones are unavailable (use 1/3 the amount).
- Add a squeeze of lemon juice for brightness.
