Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the quartered potatoes with olive oil, garlic powder, rosemary, thyme, salt, and pepper.
- Toss until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 30-35 minutes, turning halfway through, until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
