Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 cup breadcrumbs
  • 2 tbsp mixed dried herbs (thyme, rosemary, parsley)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix breadcrumbs, herbs, salt, and pepper in a bowl.
  3. Coat chicken breasts with olive oil, then press into the breadcrumb mixture.
  4. Place chicken on a baking sheet and bake for 25-30 minutes.
  5. Boil potatoes in salted water until tender, about 15 minutes.
  6. Drain potatoes, then mash with garlic, milk, butter, and salt.
  7. Serve chicken hot with mashed potatoes.
