- 2 tbsp olive oil
- 1 cup breadcrumbs
- 2 tbsp mixed dried herbs (thyme, rosemary, parsley)

- 1/2 tsp black pepper
- 4 large potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/4 cup milk
- 2 tbsp butter
- 1/2 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- Mix breadcrumbs, herbs, salt, and pepper in a bowl.
- Coat chicken breasts with olive oil, then press into the breadcrumb mixture.
- Place chicken on a baking sheet and bake for 25-30 minutes.
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes, then mash with garlic, milk, butter, and salt.
- Serve chicken hot with mashed potatoes.

- Adjust garlic to taste.
- For crispier chicken, broil for 2-3 minutes before serving.
