Juicy herb butter roasted turkey breast served with creamy garlic mashed potatoes.
Ingredients

- 1 boneless turkey breast (about 3 lbs)
- 1/2 cup unsalted butter, softened
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
- 2 lbs potatoes, peeled and cubed
- 4 cloves garlic, roasted
- 1/2 cup milk
- 1/4 cup butter
Instructions
- Preheat oven to 375°F.
- Mix softened butter, rosemary, thyme, minced garlic, salt, and pepper.
- Rub herb butter under and over turkey breast skin.
- Roast turkey breast for 1 hour or until internal temperature reaches 165°F.
- Boil potatoes until tender.
- Mash potatoes with roasted garlic, milk, and butter.
- Serve turkey sliced with mashed potatoes.
Notes
- Let turkey rest 10 minutes before slicing.
- Use a meat thermometer for best results.
