Description

Juicy herb butter roasted turkey breast served with creamy garlic mashed potatoes.


Ingredients

  • 1 boneless turkey breast (about 3 lbs)
  • 1/2 cup unsalted butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and cubed
  • 4 cloves garlic, roasted
  • 1/2 cup milk
  • 1/4 cup butter

Instructions

  1. Preheat oven to 375°F.
  2. Mix softened butter, rosemary, thyme, minced garlic, salt, and pepper.
  3. Rub herb butter under and over turkey breast skin.
  4. Roast turkey breast for 1 hour or until internal temperature reaches 165°F.
  5. Boil potatoes until tender.
  6. Mash potatoes with roasted garlic, milk, and butter.
  7. Serve turkey sliced with mashed potatoes.

Notes

  • Let turkey rest 10 minutes before slicing.
  • Use a meat thermometer for best results.
