Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 can (15 oz) diced tomatoes
  • 1 cup dried green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 1 can (15 oz) butter beans, drained and rinsed
  • 4 cups fresh spinach, roughly chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the dried thyme and ground cumin, cooking for 1 more minute until fragrant.
  4. Add the diced tomatoes, lentils, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 25 minutes, or until the lentils are tender.
  5. Stir in the butter beans and chopped spinach, cooking for an additional 5 minutes until the spinach is wilted.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
