- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1 can (15 oz) diced tomatoes
- 1 cup dried green or brown lentils, rinsed
- 4 cups vegetable broth
- 1 can (15 oz) butter beans, drained and rinsed
- 4 cups fresh spinach, roughly chopped
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the dried thyme and ground cumin, cooking for 1 more minute until fragrant.
- Add the diced tomatoes, lentils, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 25 minutes, or until the lentils are tender.
- Stir in the butter beans and chopped spinach, cooking for an additional 5 minutes until the spinach is wilted.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
