Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef stew meat and brown on all sides.
- Add chopped onion and minced garlic, sauté until fragrant.
- Stir in carrots and potatoes.
- Pour in beef broth and add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Serve hot.
