A hearty chicken soup with potatoes, perfect for a comforting meal.
Ingredients

- 2 chicken breasts
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Add garlic and cook for 1 minute.
- Add chicken breasts, potatoes, chicken broth, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Remove chicken, shred it, and return to the pot.
- Simmer for another 5 minutes.
- Serve hot.
Notes
- You can add other vegetables like peas or corn.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
