Ingredients

- 1 lb beef chuck, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 potatoes, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Return beef to the pot and pour in beef broth.
- Stir in potatoes, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until beef is tender.
- Remove bay leaf before serving.
Notes
- For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before simmering.
- You can add other vegetables like peas or mushrooms.
- Store leftovers in the fridge for up to 3 days.
