A hearty and flavorful beef stew made with tender chunks of beef, vegetables, and a rich broth. Perfect for a comforting meal.


Ingredients

  • 1 lb beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 potatoes, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and cook for 1 minute.
  5. Return beef to the pot and pour in beef broth.
  6. Stir in potatoes, salt, pepper, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours until beef is tender.
  8. Remove bay leaf before serving.

Notes

  • For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before simmering.
  • You can add other vegetables like peas or mushrooms.
  • Store leftovers in the fridge for up to 3 days.
