Ingredients

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine cooked quinoa, black beans, corn, and bell pepper.
  4. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  5. Pour dressing over salad and mix well.
  6. Top with diced avocado before serving.
