Ingredients

- 2 cups quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, black beans, corn, and bell pepper.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour dressing over salad and mix well.
- Top with diced avocado before serving.
Notes
- Feel free to add other vegetables.
- This dish is great served cold or warm.
- Store leftovers in the fridge for up to 3 days.
