Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups chopped kale
- 1 can (15 oz) white beans, drained and rinsed
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in vegetable broth and diced tomatoes. Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add kale and white beans. Cook for 5 more minutes.
- Serve hot.
Notes
- Use low-sodium broth if you prefer less salt.
- Swap kale with spinach for a milder taste.
- Store leftovers in the fridge for up to 3 days.
