  • 1/2 tsp black pepper
  • 2 cups chopped kale
  • 1 can (15 oz) white beans, drained and rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and diced tomatoes. Add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add kale and white beans. Cook for 5 more minutes.
  7. Serve hot.
