Ingredients

- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup carrots, shredded
- 1/4 cup red onion, thinly sliced

- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine greens, tomatoes, cucumber, carrots, and onion.
- Add feta cheese on top.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Drizzle dressing over the salad.
- Season with salt and pepper.
- Toss gently to combine.
- Serve immediately.

- Use any vegetables you like.
- Can add grilled chicken for more protein.
- Store leftover salad in the fridge for one day.
