Ingredients

- 2 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, diced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables.
- Chop the mixed greens, tomatoes, cucumber, avocado, and red onion.
- Combine all chopped ingredients in a large bowl.
- In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Top with crumbled feta (optional) and serve immediately.

- For extra protein, add grilled chicken or chickpeas.
