Ingredients

- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 cup diced vegetables (bell peppers, carrots, broccoli)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring water to a boil.
- Add quinoa and salt, reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add diced vegetables and sauté until tender.
- Fluff quinoa with a fork and mix in sautéed vegetables.
- Add lemon juice, pepper, and serve.
Notes
- Adjust vegetables based on your preference.
- Quinoa can be substituted with brown rice.
- Store leftovers in an airtight container in the fridge.
