  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Stir in the minced garlic, cumin, and smoked paprika. Cook for an additional minute until fragrant.
  4. Add the rinsed lentils, vegetable broth, diced tomatoes, and bay leaves. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25-30 minutes or until lentils are tender.
  6. Remove bay leaves and season with salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley if desired.
