- 1 cup dried lentils (green or brown), rinsed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the minced garlic, cumin, and smoked paprika. Cook for an additional minute until fragrant.
- Add the rinsed lentils, vegetable broth, diced tomatoes, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes or until lentils are tender.
- Remove bay leaves and season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
