Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup dried lentils, rinsed
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups kale or spinach, chopped
  • Salt to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes, until softened.
  3. Stir in the garlic, cumin, smoked paprika, thyme, and black pepper. Cook for an additional minute until fragrant.
  4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat to a simmer and cover. Cook for about 25-30 minutes, or until lentils are tender.
  6. Stir in the chopped kale or spinach and cook for an additional 5 minutes.
  7. Season with salt to taste and stir in the lemon juice before serving.

Notes

  • This soup can be stored in the fridge for up to 5 days or frozen for up to 3 months.
