Ingredients

  • 3 ripe bananas (mashed)
  • 1/3 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, coconut oil, honey, egg, and vanilla.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients, stirring until just mixed. Fold in nuts if using.
  5. Pour batter into the loaf pan and bake for 45-55 minutes or until a toothpick comes out clean.
  6. Let it cool before slicing.

Notes

  • Use very ripe bananas for the best sweetness.
  • You can replace honey with maple syrup for a vegan version.
