Ingredients

  • 1 cup green or brown lentils, rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 4 cups fresh spinach, chopped
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in lentils, vegetable broth, cumin, coriander, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for about 25-30 minutes, or until lentils are tender.
  5. Add chopped spinach and cook for another 5 minutes until wilted.
  6. Stir in lemon juice before serving for a fresh flavor.

Notes

  • Feel free to add other vegetables like bell peppers or zucchini for more nutrition.
  • This soup can be stored in the refrigerator for up to 5 days or frozen for later use.
