Ingredients

- 1 cup green or brown lentils, rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 4 cups fresh spinach, chopped
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in lentils, vegetable broth, cumin, coriander, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 25-30 minutes, or until lentils are tender.
- Add chopped spinach and cook for another 5 minutes until wilted.
- Stir in lemon juice before serving for a fresh flavor.
Notes
- Feel free to add other vegetables like bell peppers or zucchini for more nutrition.
- This soup can be stored in the refrigerator for up to 5 days or frozen for later use.
