  • 1 cup dried lentils (green or brown), rinsed
  • 6 cups vegetable broth or water
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 2 cups spinach or kale, chopped
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the garlic, cumin, coriander, turmeric, and smoked paprika. Cook for another minute until fragrant.
  4. Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce the heat to low and let it simmer for about 25-30 minutes, or until the lentils are tender.
  6. Stir in the chopped spinach or kale and cook for another 5 minutes.
  7. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
