- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon smoked paprika
- 1 cup dried lentils (green or brown), rinsed
- 6 cups vegetable broth or water
- 1 can (14.5 oz) diced tomatoes, with juice
- 2 cups spinach or kale, chopped
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the garlic, cumin, coriander, turmeric, and smoked paprika. Cook for another minute until fragrant.
- Add the rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
- Reduce the heat to low and let it simmer for about 25-30 minutes, or until the lentils are tender.
- Stir in the chopped spinach or kale and cook for another 5 minutes.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
Notes
- Feel free to add other vegetables like bell peppers or zucchini for extra nutrition.
- This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
