- 4 boneless, skinless chicken breasts
- 1 bunch asparagus, trimmed
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp ketchup
- 1 tbsp rice vinegar
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Whisk pineapple juice, soy sauce, brown sugar, garlic, ginger, ketchup, and rice vinegar in a bowl.
- Coat chicken breasts with half the sauce and marinate for 15 minutes.
- Grill chicken for 6-7 minutes per side, basting with remaining sauce.
- Toss asparagus with oil, salt, and pepper, then roast at 400°F for 10-12 minutes.
- Stack grilled chicken with roasted asparagus and serve.
Notes
- For extra flavor, marinate chicken overnight.
- Use fresh pineapple juice if available.
- Adjust sweetness by reducing brown sugar.
