Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp ginger powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix soy sauce, honey, olive oil, garlic powder, and ginger powder.
- Toss chicken thighs in half of the marinade.
- Arrange chicken, pineapple, bell peppers, and onion on a sheet pan.
- Drizzle remaining marinade over the vegetables.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve hot.

- Use fresh pineapple for best results.
- Adjust honey for sweetness preference.
- Check chicken internal temperature reaches 165°F (74°C).
