Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, olive oil, garlic powder, and ginger powder.
  3. Toss chicken thighs in half of the marinade.
  4. Arrange chicken, pineapple, bell peppers, and onion on a sheet pan.
  5. Drizzle remaining marinade over the vegetables.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Serve hot.
