Ingredients

  • 1 (30 oz) bag frozen hashbrowns, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup diced ham or cooked bacon
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed hashbrowns, half of the cheddar cheese, diced ham or bacon, onion, and bell pepper. Mix well.
  3. In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  4. Pour the egg mixture over the hashbrown mixture and stir to combine.
  5. Grease a 9×13-inch baking dish with cooking spray or butter. Pour the hashbrown mixture into the dish and spread it evenly.
  6. Top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
  8. Let cool for a few minutes before serving. Enjoy!

Notes

  • Feel free to customize the casserole by adding your favorite vegetables or swapping the meat.
  • This casserole can be made ahead of time. Assemble it the night before and refrigerate until ready to bake.
