- 1 (30 oz) bag frozen hashbrowns, thawed
- 1 cup shredded cheddar cheese
- 1 cup diced ham or cooked bacon
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 6 large eggs
- 1 cup milk
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the thawed hashbrowns, half of the cheddar cheese, diced ham or bacon, onion, and bell pepper. Mix well.
- In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
- Pour the egg mixture over the hashbrown mixture and stir to combine.
- Grease a 9×13-inch baking dish with cooking spray or butter. Pour the hashbrown mixture into the dish and spread it evenly.
- Top with the remaining cheddar cheese.
- Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
- Let cool for a few minutes before serving. Enjoy!
Notes
- Feel free to customize the casserole by adding your favorite vegetables or swapping the meat.
- This casserole can be made ahead of time. Assemble it the night before and refrigerate until ready to bake.
