Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 2 tbsp water (for dressing)

Instructions

  1. Cook quinoa in water or vegetable broth until tender, about 15 minutes. Fluff with a fork and let cool.
  2. Prepare vegetables: halve cherry tomatoes, dice cucumber, slice avocado, and thinly slice red onion.
  3. Make tahini dressing by whisking tahini, lemon juice, minced garlic, salt, and water until smooth.
  4. Assemble bowls by layering quinoa, vegetables, and avocado.
  5. Drizzle with tahini dressing and garnish with chopped parsley.
  6. Serve immediately or store for later.
